There are many different tests conducted for each type of cancer. A biopsy of the concerned tissue is often conclusive.

Blood tests might show "smoke", that is indirect evidence for the cancer "fire" due to damage in other organs (liver involvement [metastases] for instance might cause elevation in liver enzymes); however a biopsy is required to make the diagnosis. You could do this with direct visualization of the throat and stomach. One would not expect to see cancer cells from these cancers in the bloodstream.
