what's the first step to starting a 'real' non profit org to REALLY help people ?I would like to start a Non Profit Org to help people. I've needed help for my sister in law no one emails back now my friends mom is in real need and I emailed a cancer org and no response so I want to start one to really help people.

The IRS would need to approve your application to become a 501(c)(3) non-profit. That's what gives the organization you want to form the ability to take tax-deductible donations to further the public interest, such as aiding those in need.
See the link below for the application forms, info, and procedures. That'll get you on your way. It'll also tell you about next steps, like the need for a board of directors, the need to incorporate the business (which must be done at the state level, etc.) Note: your state might also have an application process.
